Creamy Bacon Cheddar Corn
Ingredients
4 cups corn (frozen, fresh, or canned, drained)
1 cup heavy cream
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
1/2 cup cream cheese
1 tbsp butter
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Directions
Cook the Corn: In a large skillet, melt butter over medium heat. Add the corn and cook for 5-6 minutes, stirring occasionally, until tender.
Make it Creamy: Add the heavy cream and cream cheese to the skillet. Stir until the cream cheese is fully melted and incorporated.
Add the Cheese: Stir in the shredded cheddar cheese, allowing it to melt into the creamy mixture. Season with salt and pepper to taste.
Finish with Bacon: Stir in the crumbled bacon, reserving a little for garnish.
Serve: Garnish with fresh parsley and extra bacon crumbles. Serve hot as a delicious side dish!
