Loaded Cheesy Mashed Potato Casserole
Ingredients:
6 large potatoes (peeled and cubed)
1/2 cup unsalted butter
1 cup sour cream
1/2 cup whole milk
2 cups shredded cheddar cheese (divided)
1/2 cup cooked bacon (crumbled)
2 tbsp fresh chives (chopped)
Salt and pepper (to taste)
Directions:
Boil the potatoes: Place cubed potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well.
Mash the potatoes: Return potatoes to the pot. Add butter, sour cream, and milk. Mash until smooth and creamy. Season with salt and pepper to taste.
Layer the casserole: Preheat oven to 375°F (190°C). Spread half of the mashed potatoes into a greased baking dish. Sprinkle 1 cup of shredded cheddar cheese on top.
Add the toppings: Spread the remaining mashed potatoes over the cheese layer. Top with the remaining cheese and crumbled bacon.
Bake: Place in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
Serve: Garnish with fresh chives and serve hot!
