Vanilla Crepes with Berry Coconut Cream Filling
These vanilla crepes are filled with a luscious berry coconut whipped cream, fresh fruit, and a touch of peanut butter. They make for a delightful and satisfying breakfast or dessert!

Ingredients
Crepes:
1 cup oat flour (or rolled oats blended to flour)
5 tbsp potato starch
2 tbsp coconut sugar
Tiny pinch of sea salt
1 tsp vanilla extract
1 cup sparkling water
2 tbsp coconut oil, melted
Berry Coconut Whipped Cream:
1 can full-fat coconut milk, kept in the fridge
2 tbsp maple syrup
½ tsp vanilla powder
2 tsp blueberry powder
Filling and Toppings:
Berry coconut whipped cream
Blueberries and blackberries
Banana slices
Peanut butter
Coconut milk powder

Instructions
Preparing the Crepes:
Preheat Skillet:

Preheat a non-stick skillet or crepe pan over medium heat.
Mix Dry Ingredients:

In a bowl, combine oat flour, potato starch, coconut sugar, and a pinch of sea salt.
Add Wet Ingredients:

Add vanilla extract, sparkling water, and melted coconut oil to the dry ingredients. Stir until well combined and smooth.
Cook Crepes:

Add a tiny drop of coconut oil to the skillet.
Pour a small amount of batter into the skillet and swirl to form a thin round crepe.
Cook until the surface looks dry and bubbles form. Flip with a thin spatula and cook the other side until golden.
Transfer cooked crepes to a plate and set aside. Repeat with the remaining batter.
Making the Berry Coconut Whipped Cream:
Prepare Coconut Cream:

Open the chilled can of coconut milk and scoop out the thick white cream into a bowl.
Mix Ingredients:

Add maple syrup, vanilla powder, and blueberry powder to the coconut cream.
Whip:

Using a mixer, whip the mixture until fluffy. If it becomes too liquid, place it in the freezer for 10 minutes to firm up.
Assembling the Crepes:
Fill Crepes:

Spoon about ¼ cup of berry coconut whipped cream down the center of each crepe.
Add Fruit:

Add a few banana slices and berries (whole or mashed) on top of the whipped cream.
Roll Crepes:

Roll up the crepes to enclose the filling.
Top and Serve:

Drizzle with peanut butter.
Sprinkle with additional berries and a dusting of coconut milk powder.
